Lemon & Herb Chicken on Fried Potatoes & Rocket Leaves

Like I always say. If you add everything you like into one plate, how could it not taste good?

Serves 2


6 medium sized potatoes, cooked and sliced
1 medium size onion, sliced
300g boneless chicken
1 tbsp dried coriander
juice of 1 lemon
2 tbsp extra virgin olive oil
freshly ground black pepper
2 hand fulls of rocket leaves
1 big red chili sliced
50g feta cheese, crumbed


Mix the coriander, lemon juice and olive oil together and marinate the chicken in this mixture for 30 minutes.
Once the chicken has marinated, fry it on a griddle pan and at the same time, fry the potatoes and sliced onions in a separate pan. I add some chili powder and a little bit of turmeric to the potatoes to give it a bit of bite, but feel free to add any spices you like.
Divide the potatoes evenly on two plates and cover with fresh rocket leaves.
Place the chicken on top of the rocket leaves and finish with the sliced red chili and crumbed feta.

Very easy to do, and really delicious.
