Coconut and Honey Granola Parfait

As we are in lock down in Sydney and it is a 5 day wait for grocery deliveries I had to come up with something to feed the family this morning. Luckily I had a few items in my cupboard to make this delicious granola which will now take care of breakfast for a few days, another win. Quick and easy. Enjoy!

Ingredients

3 cups rolled oats

1/2 cup pecan nuts

1/2 cup walnuts

1 cup toasted coconut chips

1/2 cup coconut oil

1/2 cup honey

2 tsp vanilla extract

1 cup Greek yoghurt

1 cup fresh blue berries

Method

Preheat the oven to 180 C. Put the vanilla, honey and coconut oil in a microwave safe dish. Heat on high for 15 seconds bursts until it combines properly when whisked. The oil and honey should not be split. I did 5 x 15 second bursts in my microwave. While that is going mix the oats, coconut chips and nuts in a bowl. Once the honey mixture is ready pour over the dry ingredients and mix well until everything is well coated. Spoon out onto a oven tray lined with baking paper, spreading it evenly and bake in the oven for 25 – 30 minutes stirring every 10 minutes. Once nice and toasted remove from oven and allow to cool before breaking into cluster. Serve with Greek yoghurt and fresh blue berries. The granola can also be eaten with milk. Enjoy!

Chocolate Granola, Raspberry and Mint Yoghurt Parfait

Raspberry and Chocolate as we all know is yum together. This is a bit more indulgent than the usual yoghurt parfait but don’t we all deserve a bit of indulgence every now and then. A bit more work to this one but well worth the extra bit of effort. Enjoy

Ingredients

2 cup Greek yoghurt

2 punnets of fresh raspberries

Juice from half a lemon

1 tbsp castor sugar

1/3 cup water

2 cups dark chocolate granola

1/3 cup Fresh mint leaves, torn

Method

Place one punnet of raspberries with the lemon juice, castor sugar and water in a pot over medium heat and cook until the raspberries have softened completely. Strain through a sieve and allow to cool.

In a glass layer your granola followed by yoghurt, then add a bit of the raspberry coulis and swirl through the yoghurt. Top with some fresh raspberries and mint and repeat the layering. Absolutely delicious. Enjoy

Kiwi and Coconut Granola Yoghurt Parfait

This one is simple. Simple but delicious. It changes a breakfast from being boring and the same everyday to something that looks and tastes amazing. Enjoy

Ingredients

1 cup almond vanilla granola

2 green kiwi fruit , skin removed and cut into chuncks

1/3 cup coconut chips

1 cup Greek yoghurt

Method

Very simply layer the granola, fruit and yoghurt and repeat. Keep some kiwi and coconut to decorate the top and sprinkle over a bit more granola crunch. Enjoy
